Yu Choy/ 油菜 / Choy Sum/ Cai Xin/ Chinese Flowering Cabbage

Yu Choy

The name Yu Choy literally translates “oil vegetable”, which makes sense. If you see something green and leafy in your stir fry, chances are, it’s Yu Choy. Part of the mustard family, it’s been cultivated in China since at least the 1400s, and been put to use liberally in stir fries, sautees, and soups. A vegatable with a mild flavor, it pairs well with meats such as poultry and pork, the ever versatile mushroom, fish, and other veggies!
The stalks and leaves will keep well in the fridge for up to five days in the crisper drawer. (Tip: Put a paper towel into the container to absorb moisture and keep leafy veggies lasting longer!)
